
Wicked Emerald City Spinach Dip
This vibrant green spinach dip captures the essence of the Emerald City with its rich, creamy texture and bold flavors. The combination of fresh herbs and tangy lemon gives it a wickedly delicious taste that will have your guests spellbound.

Ingredients
- 10 oz fresh spinach leaves (roughly chopped)
- 1 cup Greek yogurt
- 8 oz cream cheese (softened)
- 1/4 cup fresh parsley (chopped)
- 2 tablespoon fresh dill (chopped)
- 2 green onions (finely sliced)
- 2 clove garlic (minced)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- green food coloring (optional, for deeper emerald color)
- green vegetable crudités (for serving (cucumber slices, celery sticks, green bell pepper strips))
- black sesame crackers (for serving)
Instructions
- Blanch the spinach in boiling water for 30 seconds, then immediately transfer to an ice bath to stop the cooking. Drain thoroughly and squeeze out excess water.
- In a food processor, combine the blanched spinach, Greek yogurt, cream cheese, parsley, dill, green onions, garlic, lemon juice, and lemon zest. Pulse until smooth and well combined.
- Add salt, black pepper, and cayenne pepper. Pulse again to mix. If desired, add a tiny drop of green food coloring for a more vibrant emerald color and mix well.
- Transfer to a serving bowl and chill for at least 15 minutes before serving.
- Serve with green vegetable crudités and black sesame crackers for a striking "Wicked" color contrast.
Notes
For an extra theatrical touch, you can create a swirl design on top with a darker green pesto or sprinkle with black poppy seeds. This dip can be made up to 24 hours in advance and stored covered in the refrigerator.
