
Simple Coconut Rice
This coconut rice is perfectly fluffy with a subtle tropical sweetness that pairs beautifully with any Asian or Caribbean dish. The jasmine rice absorbs the rich coconut milk, creating an aromatic side dish that's both comforting and slightly exotic.

Ingredients
- 1 cup jasmine rice
- 1 cup coconut milk
- 0.75 cup water
- 0.5 teaspoon salt
- 1 tablespoon coconut oil
- 2 tablespoons shredded coconut (optional, for garnish)
Instructions
- Rinse the jasmine rice in cold water until the water runs clear, then drain well.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and coconut oil.
- Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff with a fork and garnish with shredded coconut if desired before serving.
Notes
For extra flavor, you can add a kaffir lime leaf or lemongrass stalk to the rice while cooking and remove before serving.
