This quick mushroom quiche delivers rich, savory flavors with minimal effort using a store-bought crust. The combination of sautéed mushrooms, herbs, and creamy cheese filling creates a deliciously satisfying meal that tastes like it took hours instead of minutes.

Ingredients

  • 1 store-bought pie crust (9-inch)
  • 2 tablespoon butter
  • 8 oz mushrooms (sliced)
  • 1 small onion (diced)
  • 2 clove garlic (minced)
  • 4 large eggs
  • 1 cup half-and-half
  • 1 cup Swiss cheese (shredded)
  • 0.25 teaspoon dried thyme
  • salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish.
  2. Melt butter in a large skillet over medium heat. Add mushrooms and onion, cooking until softened, about 5 minutes.
  3. Add garlic and cook for 30 seconds more. Season with salt and pepper. Remove from heat and let cool slightly.
  4. In a bowl, whisk together eggs, half-and-half, thyme, and additional salt and pepper.
  5. Spread mushroom mixture evenly in the pie crust. Sprinkle with Swiss cheese.
  6. Pour the egg mixture over the mushrooms and cheese.
  7. Bake for 20 minutes, or until the center is set and the top is golden brown.
  8. Let cool for 5 minutes before slicing and serving.

Notes

For extra flavor, add 1/4 cup of chopped fresh herbs like parsley or chives. The quiche can be made ahead and reheated.
