
Quick Mushroom Quiche
This quick mushroom quiche delivers rich, savory flavors with minimal effort using a store-bought crust. The combination of sautéed mushrooms, herbs, and creamy cheese filling creates a deliciously satisfying meal that tastes like it took hours instead of minutes.

Ingredients
- 1 store-bought pie crust (9-inch)
- 2 tablespoon butter
- 8 oz mushrooms (sliced)
- 1 small onion (diced)
- 2 clove garlic (minced)
- 4 large eggs
- 1 cup half-and-half
- 1 cup Swiss cheese (shredded)
- 0.25 teaspoon dried thyme
- salt and pepper (to taste)
Instructions
- Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish.
- Melt butter in a large skillet over medium heat. Add mushrooms and onion, cooking until softened, about 5 minutes.
- Add garlic and cook for 30 seconds more. Season with salt and pepper. Remove from heat and let cool slightly.
- In a bowl, whisk together eggs, half-and-half, thyme, and additional salt and pepper.
- Spread mushroom mixture evenly in the pie crust. Sprinkle with Swiss cheese.
- Pour the egg mixture over the mushrooms and cheese.
- Bake for 20 minutes, or until the center is set and the top is golden brown.
- Let cool for 5 minutes before slicing and serving.
Notes
For extra flavor, add 1/4 cup of chopped fresh herbs like parsley or chives. The quiche can be made ahead and reheated.
