Emerald City Avocado Deviled Eggs

These vibrant green deviled eggs are a spellbinding tribute to the Emerald City with their wicked green hue and devilishly good flavor. The creamy avocado filling is enhanced with lime and cilantro, creating a bewitching combination that will have your party guests under your culinary spell.

Ingredients

  • 6 eggs (large, hard-boiled and peeled)
  • 1 avocado (ripe)
  • 1 tablespoon lime juice
  • 2 tablespoon mayonnaise
  • 1 tablespoon cilantro (fresh, chopped)
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • green food coloring (optional, for more intense green)
  • paprika (for garnish)
  • cilantro leaves (fresh, for garnish)

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and gently remove the yolks into a medium bowl.
  2. Add the avocado, lime juice, mayonnaise, chopped cilantro, garlic powder, salt, black pepper, and cayenne pepper (if using) to the yolks.
  3. Mash everything together until smooth and creamy. Add a drop or two of green food coloring if you want a more vibrant 'Emerald City' green color.
  4. Spoon or pipe the filling back into the egg white halves.
  5. Sprinkle with a light dusting of paprika and garnish with small cilantro leaves.
  6. Arrange on a serving platter and chill until ready to serve.

Notes

For a 'Wicked Witch' twist, add black sesame seeds on top instead of paprika. Make these up to 24 hours in advance and store covered in the refrigerator.
