
Emerald City Avocado Deviled Eggs

Ingredients
- 6 eggs (large, hard-boiled and peeled)
- 1 avocado (ripe)
- 1 tablespoon lime juice
- 2 tablespoon mayonnaise
- 1 tablespoon cilantro (fresh, chopped)
- 0.5 teaspoon garlic powder
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon cayenne pepper (optional)
- green food coloring (optional, for more intense green)
- paprika (for garnish)
- cilantro leaves (fresh, for garnish)
Instructions
- Cut the hard-boiled eggs in half lengthwise and gently remove the yolks into a medium bowl.
- Add the avocado, lime juice, mayonnaise, chopped cilantro, garlic powder, salt, black pepper, and cayenne pepper (if using) to the yolks.
- Mash everything together until smooth and creamy. Add a drop or two of green food coloring if you want a more vibrant 'Emerald City' green color.
- Spoon or pipe the filling back into the egg white halves.
- Sprinkle with a light dusting of paprika and garnish with small cilantro leaves.
- Arrange on a serving platter and chill until ready to serve.
Notes
For a 'Wicked Witch' twist, add black sesame seeds on top instead of paprika. Make these up to 24 hours in advance and store covered in the refrigerator.
