Prep: 10 minutes
Cook: 20 minutes (churning)
Serves: 6
Ingredients
- 2 cups water
- 1 cup granulated sugar
- 1 cup fresh lemon juice (about 6-8 lemons)
- 2 tablespoons lemon zest
- 1 tablespoon vodka (optional, helps prevent crystallization)
Instructions
- Combine water and sugar in a saucepan over medium heat. Stir until sugar completely dissolves (about 5 minutes), then remove from heat.
- Add lemon zest to the sugar syrup and let cool completely (about 10 minutes).
- Stir in fresh lemon juice and vodka (if using).
- Pour mixture into your ice cream maker and churn according to manufacturer's instructions (usually 15-20 minutes).
- Transfer to an airtight container and freeze for at least 2 hours before serving for a firmer texture.
Notes
For extra lemony flavor, add a drop of lemon extract. The vodka is optional but helps keep the sorbet from freezing too hard.
