Easy Lemon Sorbet

Ingredients

  • 2 cups water
  • 1 cup granulated sugar
  • 1 cup fresh lemon juice (about 6-8 lemons)
  • 2 tablespoons lemon zest
  • 1 tablespoon vodka (optional, helps prevent crystallization)

Instructions

  1. Combine water and sugar in a saucepan over medium heat. Stir until sugar completely dissolves (about 5 minutes), then remove from heat.
  2. Add lemon zest to the sugar syrup and let cool completely (about 10 minutes).
  3. Stir in fresh lemon juice and vodka (if using).
  4. Pour mixture into your ice cream maker and churn according to manufacturer's instructions (usually 15-20 minutes).
  5. Transfer to an airtight container and freeze for at least 2 hours before serving for a firmer texture.

Notes

For extra lemony flavor, add a drop of lemon extract. The vodka is optional but helps keep the sorbet from freezing too hard.
