Ingredients

  • 2 avocados (ripe, sliced)
  • 2 grapefruits (pink or ruby red, segmented)
  • 0.25 red onion (thinly sliced)
  • 2 tablespoon lime juice (fresh)
  • 1 tablespoon honey
  • 2 tablespoon extra virgin olive oil
  • salt (to taste)
  • black pepper (freshly ground, to taste)
  • 2 tablespoon cilantro (fresh, chopped)
  • 1 tablespoon pistachios (chopped, optional)

Instructions

  1. Segment the grapefruits: Cut off the top and bottom of each grapefruit. Stand the grapefruit on one flat end and cut away the peel and white pith. Over a bowl to catch juices, cut between the membranes to release the segments.
  2. Halve, pit, and slice the avocados.
  3. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper to make the dressing.
  4. On a serving plate, arrange the avocado slices and grapefruit segments. Scatter the red onion slices on top.
  5. Drizzle the dressing over the salad.
  6. Garnish with chopped cilantro and pistachios if using. Serve immediately.

Notes

For best results, use ripe but firm avocados. This salad is best served fresh as avocados can brown quickly once cut.
